The Toddler War on Food

As a fairly new mom I’ve heard of the different obstacles parents face in raising little human beings. From transitioning a baby to a crib, breaking from the paci, potty-training, and the list goes on and on.

The one obstacle I had never heard of before is the battle over food. I was quite surprised, after 18 months of smooth sailing with Parker Bear, to be squarely on the battleground of a full on food war with our little boy.
 
The last six months have been quite a journey through the world of toddler eating for all of us! Today we are no where near where we want to be but there is light at the end of the tunnel. We’ve learned so much and have found acceptance in the most unlikely of places.

It all started this past fall. Parker suddenly began refusing food that he had enjoyed just a day or two before. This came as a shock to me because had been Parker eating like a champ! In the summer he was nursing four times a day and eating anything we placed in front of him. Dinners were wonderful because Parker would have his own smaller plate of whatever we were eating. As we moved into fall, Parker weaned easily from nursing shortly after he turned eighteen months.
 
His sudden pickiness was so surprising! I quickly learned through several sources that children often go through a “picky phase” around 18-months. We chalked it up to that and just let Parker eat whatever he wanted which was about three foods. The same three foods at every meal. After all, I didn’t want him to go hungry.

Over the course of a few months, Parker went from not eating much to eating next to nothing. He would not even try a food he was not familiar with. This was so unlike the boy from a few months prior! I began to get concerned about the nutrients he was missing as well as frustrated in not being able to properly feed my child. What was wrong with me?

I knew where I wanted us to be as far as toddler eating is concerned: I didn't want a picky child; I didn't want to cook two meals, one for him and one for us; and I wanted meal times to be a happy time for our family. I was also concerned that I might find out years from now that I created a picky eater by catering to this phase. 
I appreciated the support and advice I got from friends. Many people suggested specific toddler recipes. I wasn’t interested in going that route for two reasons: one, I wasn’t going to make two meals for our family, and two, since Parker would not try anything new that would be a waste of time and money for us.

On more than one occasion a meal would end with me or Parker or both of us in tears. We were having such a difficult time! After watching him eat nothing but “puffs” meal after meal, we headed to the pediatrician. Parker’s doctor was not too concerned. He scheduled an appointmet for us to see a peditracic nutritionist  and ordered a blood test just to make sure Parker was not anemic.
 
Around this same time I talked to Parker’s therapists and checked out what was available online. Through these different sources I learned so much:

*I should not get in the habit of making a separate meal for Parker
*Children are not going to starve themselves, no matter how little food they appear to eat
*Mealtimes should be fun not frustrating for the family
*And most importantly, to remove (negative) emotion

While I was completely on board with these guidelines, I needed to know how I was supposed to get Parker to eat. Here is what I learned about that part:

*At each meal offer one food that the child likes – this is a win for everyone
*Continue to offer foods even after refusal for several days – it can take up to ten “no’s” before getting one “yes”
*If a food is refused, wrap it up and serve it again at the next meal time
*When possible give the child choices about what they are going to eat next

Something else that works with Parker is to keep a food available at mealtime even if he says he doesn’t want it. Sometimes he doesn’t want a certain food right then but a few minutes later he does.
 
So where are we now? I am following all of these guidelines.  Parker still gets “puffs” but only every few days, only at one meal, and only one serving as according to the package directions. Sometimes his meals are very small if he doesn’t want what I’m serving. And that’s fine with both Parker and me. Since I’ve removed negative emotion, I just talk to Parker or let him play with a toy in his highchair while Honey and I finish dinner. That way dinner is still fun and we are all together. And that’s the ultimate goal.

I hope that someday soon Parker will eat a small plate of what we are eating. I hope he one day will try macaroni and cheese, strawberries and blueberries, and homemade chicken fingers. Until then we will keep doing the best we can with what we have. 


I hope this will help any other mommies going through a similar food battle. And this mommy is open to advice and ideas from those who have been there before as we continue through this phase.

Kansas U Football Game: A Catch Up Post

You know what goes with college football and road trips? Lederhosen. At least that was the case for our college football-roadtrip in October...

While we are here at Fort Leavenworth, Kansas for Honey to complete a master's level program required of him by the Army, my ambitious husband is also getting a separate master's degree from nearby Kansas University.

Since he is a student at KU we headed out watch them in a college football game! The main campus is located 2-hours away so we decided to make a weekend out of it. It would be Parker's second college football game since he went to a game at West Point in 2012 when he was 5 months old!

A gentleman that my husband flew with when he was stationed in Germany, lives near the school and was having an Octoberfest party at his house before the big game. (That's where the Lederhosen came in…) Here is a review in pictures of our weekend and Parker's second college football game!

We got there around dinner time and went immediately to fill our bellies and then to bed! We had a big day coming up!
The next morning, Parker was appropriately dressed!
First stop was the Octoberfest Brew-Ha-Ha! The german food was quite good! My husband was an old pro at naming the dishes. It was all new to me...
I didn't get any pictures of the party scene but there were several gents dressed in full German attire! They were even drinking from authentic beer steins. For a minute I really felt like I was in Germany!

Finally it was game time!
Parker had a great time! He watched some of the game, played with his truck on the bleachers, snuggled with me and eventually, took his afternoon nap!
Even though KU lost, we had such a great time together!
We were so exhausted that night that we just ordered take out and got comfy. A great way to end a fun weekend making memories in Kansas!

Thanksgiving: Catch Up Post


We all have those "grown up moments"? You know like paying of a car. Buying a home. Getting married. Having a Baby. Yes, I've done each of these. But honestly, I'm not sure if these ever made me feel more like an adult then the time I single handedly prepared and served a Thanksgiving feast complete with a turkey from my own oven!
This year, since my husband’s school schedule did not allow the time we would need to travel home to see our families, we spent Thanksgiving at home.  Just us. And I prepared our Thanksgiving meal complete with a turkey! We also had field peas, cream style corn, sweet potato souffle and of course dressing.
 
Of course the meal did not happen without significant preparation in advance and many, many, many, many phone calls to my mom. (It was my second turkey – I cooked my first one last year for Christmas – but my first Thanksgiving meal.)
We missed our families dearly this year! Preparing Thanksgiving was especially quiet this year without the laughter and stories and wine that I traditionally share with my Mom, Aunt Carol, and Cousin Sarah during our day in the kitchen. The time we spend together over that meal for our families is one of my most favorite times of the year. Having missed it this year only means I will treasure those moments even more next year.
 
This Thanksgiving will always be special to us. Our first one alone. And I might say that I have never felt more like a “mom” than when I pulled that golden brown turkey from the oven and smiled as I called out, "dinner’s ready!"

First Annual Holiday Party

Is it just me or does the holiday season get busier and busier every year? We love getting together with friends, but around the holidays seem to get so busy that we find it can be difficult to spread Christmas cheer to our nearest and dearest. This year we started what we hope will become an annual tradition in the Snowden household; we decided this year to host a Christmas Open House! It was wonderful to see all of our friends and catch up before the holidays got away from all of us!

Of course we dressed in our red and green and Parker was so handsome in his reindeer sweater!
We hosted the party on a December Sunday afternoon and it just so happened to be day of the first snow we got this winter! The snow was a great way to get everyone into the Christmas spirit! It was so pretty!

The Holiday Party was a drop by from 1-3 and every single person on our guest list with the expection of one family was able to come! Having 40 people over, some with children, made for such a fun afternoon! We served only desserts along with punch, cider, wine, and beer. We also served Gluhwein (pronounced "glue-vine") a German wine served warm. Even though I could not indulge it was a big hit with our friends who had been stationed in Germany as well as those who had not!
Our menu for the occasion included: peanut butter kisses, chocolate-mint bark, brownies, chocolate chip cookies, rice krispy "wreaths", cookie dough truffles, cake batter balls, oatmeal drop cookies, and peanut butter squares.
We also asked that each guest bring a gift to donate to Toys for Tots. We were excited to support a wonderful way of giving back and were overwhelmed by the generosity we witnessed!
Parker had a great time showing his little friends all the toys in his playroom.
And Honey and I had a great time catching up with some of our favorite people!
Afterwards, when our guests had gone home, Honey did this. Of course.
It was such a great time, we are already looking forward to it again next year!

A few weeks later we attended a Christmas with Honey's classmates from school at Fogo De Chao, one of our most favorite restaurants! Parker got to come along with us and was really happy that he brought a few tractors to keep him busy. 
After our bellies were full we walked around the Plaza to see all of the beautiful Christmas lights! 

Two fun holiday parties this year! We had so much fun celebrating the season with friends!

A Clean Nerdy Birdy Cake

The aroma hit me as soon as I walked through the front door. It was like I had been transported to Candy Land. The smells of wonderful, delightful, chocolately sweets swept me right into her kitchen.


In her trademark red bandana and her crisp white apron, Sara Knight, the owner of Nerdy Birdy Bakery welcomed me into her home and into her top secret kitchen. 


Despite the commercial grade stainless steel work-top in the middle of her grand kitchen, the large stand alone convection oven, the neatly organized shelving units, and secondary refrigerator, this large kitchen was warm and friendly as Sara opened her Book of Secret Recipes.


I was here to make cake. Not just any cake, a first birthday cake, a smash cake, for my little boy's first birthday. And I had come to the home of Nerdy Birdy for a special cake. A "clean" cake.

Our family has committed to eating "clean" as much as possible. That means eliminating, when and where we can, unnatural sugars, white flour, whole grains, and any processed foods - which is a lot. It is a learning experience, a journey, and a lifestyle choice for us. It's something that we strive for daily.

This is not to say that we don't at times eat "dirty" food. We have storebought ice cream from time to time (even Parker has had his first ice cream from a store!), we go out to eat and are at the mercy of the restaurant, we eat at friends houses and enjoy whatever meal they have prepared for us. But for the most part, when we can control what goes in our mouth, we "clean" it up.

While I wanted my little one-year-old to have a delicious "smash" cake for his birthday celebration, I know too much. I know too much about the toxins and poisons people unknowingly put into their bodies every day and I just couldn't stand to feed that to my baby boy. But he had to have cake!

Enter the C L E A N  C A K E !

Nerdy Birdy operates a gluten-free, grain-free, toxin-free bakery near our home in Tennessee. I knew I could purchase a hand crafted creation from them but to complicate matters, I wanted to make Parker's birthday cake. 

So I called Sara up - we know each other through the CrossFit gym - and asked her... Could she make a cake for Parker but could I be there to help, assist, wash dishes, anything that would allow me to be a part of the process? Sara LOVED the idea and welcomed me with open arms! 

In fact Sara told me that I would make the cakes and she would be the assistant! Perfect

Oh, yes cakes.  There were two cakes, one for Parker's actual birthday and another for his birthday party.


So Parker and I pulled up to her large, beautifully decorated home and were ushered into the kitchen to be greeted by Sara's other passion, birds! They were a hoot and Parker loved watching them.


Over the course of the next 4 and a half hours we bumped elbows, to the sound of the high speed mixer, Sara gracefully moving about the kitchen pulling out this ingredient and that, while I measured, mixed and poured. 






We laughed and talked and the clock ticked by. We are both army wives, both mothers, both devoted to eating clean, both trying to perfect our CrossFit moves, both love to bake, the conversation flowed easily. 

And at the end? We had two clean cakes. They were flawless. And delicious. And I couldn't - and still can't - believe that I made them.










The birthday boy loved his cakes! Guests who got to sample the "clean" cake were impressed. The cake has sugar - but natural sugar, it has flour - but not white or grain flour. The taste was so rich and pure and true and delicious!

Will Parker always have a clean cake for his birthday? Probably not. Probably not every single birthday party for the rest of his life, no. 

Will I do it again? In a heartbeat. In an absolute heartbeat!
